Turkey Sausage Omelette Bites

So, I’ve been trying to find a healthy, grain free, dairy free, easy breakfast. And today, since I made pizza for all the kiddos, stumbled upon this yummy, simple recipie. Perfect. 

  • 12 Eggs
  • 1# Turkey Sausage
  • 2 Red Peppers
  • 1/2c Mushrooms
  • 1/4 tsp salt
  • 1/8 tsp ground pepper
  • 1/8 cup mayo

  • Directions: Preheat oven to 350 degrees. Line muffin tin with paper baking cups. In a bowl, beat the eggs. Add turkey sausage, peppers, mushrooms, salt, pepper & mayo. Bake for 18-20 minutes until a knife inserted into the center of an omelette comes out almost clean. 

    So good.
